2017 Le Ciel Serein Pinot Noir

Year after year, the 2017 Le Ciel Serein has proven to consistently deliver lush, aromatic and exciting pinot noir. The pure fruit expression of the vaunted “Dijon 667” clone (66%) is one of the undeniable hallmarks. It showcases a mixture of red and blackberries, and a burst of spicy boysenberry. We recommend allowing the wine to open up in the glass for at least 15 minutes before pairing!

Build the Board

For an opulent and fuller-bodied wine, this Carneros pinot noir pairs best with heavier dishes. Natalie from HappilyPink focused on fromage triple-crème as the featured pairing. Triple-crème has extra cream added before the curd is formed, which creates a consistency that is creamy and rich. Our personal favorite is Mt. Tam from Cowgirl Creamery. As a secondary cheese, she used a gournay with herbs.
With the cheese at the focus, she included fresh berries, rosemary crackers, and tart cherry and almond artisan crisps.

For the charcuterie portion, we recommend a traditional Italian salumi to pair with the rich, complex Le Ciel Serein. Our personal favorite is Journeyman Meats Finnociona Salumi. This salumi features fennel and fennel pollen and pairs beautifully with our 2017 Le Ciel Serein Pinot Noir.
