This summer salad is as healthy as it is delicious! Perfect on the side of a hearty main course or make it a complete meal by adding grilled chicken breast or smoked salmon to lend the protein factor.

For carefree entertaining, prepare in advance and dress just prior to serving. Serve with freshly baked bread to complement a pairing with our fruity and floral 2018 Brut Rosé!

Ingredients

Serves 4

Salad

  • 6 cups baby spinach (or spinach and arugula blend)
  • 16 ounces fresh strawberries, sliced
  • 1 cup fresh peaches, skinned and diced
  • 1/3 small red onion, sliced very thin and soaked in cold water
  • 4 ounces Feta or goat cheese, crumbled
  • 1/2 cup toasted pecans, roughly chopped
  • 1/2 cup poppy seed salad dressing (store bought or try our recipe below)

Poppy Seed Dressing

  • 1 cup extra virgin olive oil
  • 1/2 cup raspberry vinegar
  • 1/4 cup honey
  • 1 tablespoon poppy seeds
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt

Instruction

Combine poppy seed dressing ingredients together in a smaller bowl and whisk until well-combined.

Store in a jar and refrigerate until ready to serve.

Combine all salad ingredients into a large bowl.

Shake salad dressing jar thoroughly, and drizzle over salad ingredients.

Toss gently until well incorporated.

Optional: serve with grilled chicken or salmon on the side

Recommended: pop a bottle of 2018 Brut Rosé for a delicious pairing!
