We night picked a few tons of Pommard clone Pinot Noir for its pure expression of delicate summer fruit flavors. The fruit was greatly whole cluster pressed in the cool morning air to liberate the juice from the skins with minimal contact. Fermentation was conducted in a range of vessels; stainless barrels to preserve fruit, and neutral cooperate to add body and texture. Special yeasts were selected to enhance fruit profile, and the malo-lactic fermentation inhibited to preserve acidity.
The delicate nose offers tangerine, rhubarb, melon, and crushed rose petal. On the palate, one finds strawberry, gooseberry, stone fruits and crème fraiche all supported on a frame of firm acidity.
This wine pairs beautifully with Niçoise salad, ahi tuna tartare, smoked salmon or Caprese salad.
