The juice components were fermented primarily in neutral oak with the notable addition of a concrete egg tank. A modest amount (16%) of new water-bent French oak was employed to lift the spice. Just 132 cases produced, available only at the winery. Proper storage for up to ten years will achieve haunting complexity and grace.
The wine speaks first through its subtle and elegant nose, which is richly layered with delicate notes of jasmine, kiwi fruit and honeydew melon. The defining feature of a White Pinot Noir is its texture, which is displayed on the round and juicy palate. The rich entry, reminiscent of blanched macadamia nuts, evolves into bright and lively notes of lemon meringue, ginger, and pear.
Perfectly paired with foods such as salmon in citrus sauce, risotto, or a sashimi of tuna belly, the diversity of flavors found in this wine are beautifully enhanced by food.
