Before a sparkling wine earns the right to feature its vintage on the label, it must be aged in the bottle for three years. Our Late Disgorged Brut goes well beyond that strict requirement with a total of six years aging sur lie en bouteille - on the lees, in the bottle. The result is an enhanced, enriched edition of our acclaimed Domaine Carneros Brut Cuvée.

2011 was a cold, late vintage; the long slow summer helped concentrate the ?avors in our vineyard. It was a low yielding harvest of very ?ne quality. Approximately 3% of the cuvée underwent malolactic fermentation prior to blending, which added an additional layer of ?avor and texture.
A pale gold color and tiny bubbles are the ?rst thing that one notices. The nose, while elegant, is expressive o?ering lemon meringue, toasted macadamia nuts, baked apple and bing cherries. The silky palate has a wonderful richness that retains a very full, round and long ?nish with ?avors of tropical fruit and red berries.
Pair this winery sta? favorite with everything from fresh oysters to poultry, most Asian cuisine and rich cheeses.
