In 2018, our Château was graced with a dramatic garden conservatory called the Jardin d’Hiver—a grand glass room that immerses our guests in the spectacular Carneros landscape while sheltering from the elements. In celebration we present this limited edition cuvée, a dry and richly layered Late Disgorged Ultra Brut, a style never before produced at Domaine Carneros.

In 2012 the summer months, which are the heart of the growing season, were dominated by a persistent marine system that provided morning fog until mid-day. The combination of cool temperatures and ample crop load produced plenty of “hang-time” and allowed maximum flavor development. We started harvesting Pinot Noir on August 20, and brought in the last Chardonnay on September 22. Both varieties showed power and finesse in this remarkable vintage.
This cuvée’s unique blend and extra aging brings a layered creaminess and complexity to the senses while its low dosage makes it very crisp. Aromas of honey suckle, crème fraîche, almonds, and brioche lead to a palate highlighting notes of caramel, pie crust, meyer lemon, cashew, and poached pear. A long lingering finish invites you to enjoy another glass.
