  • Chamorro spice BBQ Chicken

This juicy, charcoal-grilled Chamorro Barbecue Chicken invites pairing with our 2022 Avant-Garde Pinot Noir, delivering a core of bright fruit and supple tannins. We recommend chilling the red bottle in the fridge for about an hour before serving, perfect for a summer evening!

"Chamorro" is the name of people that are from Guam. Bring a bit of the island of Guam into your home!

This straight forward recipe comes together quickly and delivers great flavor with the abundant garlic and soy sauce based marinade.

Serves 10-12

Ingredients:

Marinade:

  • 2 cups soy sauce
  • 3 cups white vinegar
  • 2 teaspoons ground black pepper
  • 2 teaspoons red pepper flakes
  • 2 large onions, diced and cut in half, then thirds
  • 8 garlic cloves, diced

Chicken:

  • 6 lbs chicken thighs, bone-in & skin-on (about 12-16 thighs)

Instruction:

1) Combine all marinade ingredients in a large bowl or resealable bag.
2) Add chicken and marinate for at least 4 hours, preferably overnight.
3) Grill over medium-high heat, starting skin-side down, about 6-8 minutes per side until internal temp reaches 165°F.

Pro Tip:

This chicken is wonderful served warm or at room temperature, but for food safety, serve within 1 hour of cooking. In hot weather, consider keeping it on a warm (not hot) grill or in a low oven at 200°F.
