Serves 6-8
- 4 cups mixed summer berries
- 4 large egg yolks
- 4 tablespoons superfine sugar (or regular sugar)
- 3/4 cup Domaine Carneros Brut
- Fresh mint for garnish
This elegant French finale can be made ahead, chilled, and assembled upon serving. You'll incorporate the sparkling wine into the whipped sabayon, and pour yourself a glass of our crisp Estate Brut to enjoy alongside this dessert - the tart berries balancing with the citrus notes in the wine, for a mouthwatering delicious effect.
Serves 6-8
1) In a stainless-steel bowl, whisk egg yolks and sugar until thick, pale, and smooth (about 1-2 minutes off heat).
2) Set up a double boiler with simmering water that doesn't touch the bowl bottom. Place bowl over simmering water and gradually whisk in sparkling wine. Continue whisking constantly until mixture triples in volume and becomes thick enough to ribbon off the whisk, about 6-8 minutes. Remove from heat immediately.
3) Serve warm over berries, or cool to room temperature, cover with plastic wrap touching surface, and refrigerate. If serving chilled, whisk gently before serving to restore fluffiness.
4) Place equal portions of berries in dessert glasses. Garnish with a fresh mint sprig. Serve with a plate of sable cookies or shortbread biscuits.
