Lychee French 75 Cocktail

• 3 ounces of gin, reduce if you prefer a lighter cocktail
• 6 lychees from a can
• 2 tbsp lychee syrup from the tin
• 2 tbsp lemon juice
• Chilled Ultra Brut to top up the glasses
• 2 thin slices of lychee to decorate

Muddle the lychees, lychee syrup, and lemon juice in the cocktails shaker using a muddler or end of a clean rolling pin.

Add the gin and a handful of ice cubes and shake for 30 seconds.

Strain into two chilled Champagne flutes (or coupe glasses) and top up with the Ultra Brut – be careful as this bubbly blend has a tendency to froth over the glass.

Decorate with a small slice of lychee and serve immediately.
