It starts with a Premium Floral Gin. We chose Empress Gin, a beautiful botanical spirit made with butterfly pea flowers. On its own, it pours a deep, jewel-toned indigo. But add a squeeze of lemon, and something magical happens — the citric acid shifts the color to a soft, blushing purple-pink right before your eyes.
From there, a touch of sakura syrup brings the cherry blossom character front and center — delicate, lightly sweet, floral without being fussy. And then comes the final pour: our 2021 Estate Brut, which lifts the whole drink with its fine, persistent bubbles and notes of stone fruit, lemon crisp, and a whisper of cherry blossom — yes, really. The cocktail and the wine were practically made for each other.
