From our upcoming French Bubbles & Bites menu: Buttery apples, salted amber caramel and a crisp puff pastry, baked upside down, then flipped to serve. An easy French classic.

At the winery, our seasonal Bubbles & Bites experience shows off the versatility of sparkling wine through curated food and wine pairings that highlight the flavors of cuisines from around the globe. The menu changes with the seasons, and past editions have taken guests to the Caribbean, Morocco and Southeast Asia.

Our new French menu celebrates where we come from. Domaine Carneros was founded in 1987 by the Taittinger family of Champagne, and our chateau was modeled on Château de la Marquetterie, the family's 18th-century estate in France. The French Bubbles & Bites menu is our ode to that heritage: classic French flavors, made to be enjoyed with the wines of our Carneros estate. This tarte Tatin is its sweet moment.

Baking the tarts in a muffin pan means no slicing and no wrestling a big pan, just a perfect little flip for everyone at your table. Store-bought puff pastry keeps it simple, and you'll have dessert ready in under an hour.

Ingredients

Makes 12 mini tarts · Prep 20 min · Cook 35 min

Pastry
• 1 package (17.3 oz) frozen puff pastry, 2 sheets, thawed

Apple filling
• 3 large Granny Smith apples, peeled, cored and cut into ½ in pieces or thin slices
• 2 tbsp (25 g) unsalted butter
• 1½ tbsp lemon juice

Caramel
• 6 tbsp (75 g) superfine (caster) sugar
• 3 tbsp water
• A few drops of lemon juice
• 2 tbsp (25 g) unsalted butter
• Pinch of flaky sea salt

Equipment: a 12-cup muffin pan, a 3 in round cutter, a small saucepan with a lid, a second small saucepan and a baking sheet.

Recipe

Prep. Preheat the oven to 425°F. Lightly butter the muffin cups, including the sides. Cut 12 rounds from the pastry with the cutter, lay them on a plate and chill. Toss the apples in the lemon juice.

Soften the apples. Melt the butter in the lidded saucepan over medium heat. Add the apples, cover and cook for 5 minutes, until just tender. Remove from the heat and set aside while you make the caramel.

Make the caramel. In the second saucepan, stir the sugar, water and lemon juice over medium heat until the sugar dissolves. Once it starts bubbling, stop stirring and swirl the pan occasionally until the caramel turns deep amber. Remove from the heat and stir in the butter and salt. Working quickly, spoon a little caramel into each muffin cup.

Fill. Divide the apples among the cups, packing them in snugly. For a prettier finish, use thin slices and fan them in an overlapping circle.

Top. Lay a pastry round over each cup and tuck the edges down around the apples. Prick each top once or twice with a fork.

Bake. Set the muffin pan on the baking sheet to catch any drips. Bake for 18 to 22 minutes, until the pastry is deep golden and puffed.

Flip. Let rest for 5 minutes. Lay the baking sheet (wiped clean) over the pan and, wearing oven mitts, flip it in one quick motion. Lift the pan away and press any stray apples back into place.

Tips

Tips

  • Once the caramel starts bubbling, swirl the pan instead of stirring. Stirring can make it turn grainy.
  • Pull it at deep amber. It keeps cooking in the oven.
  • Pack the apples tightly. They shrink as they bake.
  • Flip within 5 minutes, before the caramel sets. If a tart sticks, ease it out with a small spoon and press the apples back on top.
  • Make ahead: let the filled cups cool completely before topping with pastry, then refrigerate for up to 8 hours. Add 3 to 5 minutes to the bake.
